The Flavor Guide – Salty

Things like cheese, anchovies (if you like them, personally I don’t but my husband does) and bacon add more than a salty flavor to a dish, they add an extra layer of flavor. 

 Five  types of salt to try (links to Amazon) :

  1. Sel Gris 
  2. Black diamond 
  3. Flake
  4. Molokai Red
  5. Alaska Alder Smoked 

Salty recipe to try:

Cheesy Chorizo Meat Loaf 

  • 1 cup uncooked long-grain white rice
  • ½ teaspoon salt
  • 1 pound ground pork
  • ½ pound dry Spanish chorizo, diced into 1/3-inch cubes
  • 9 to 10 ounces Manchego cheese, similarly diced
  • 4 eggs, lightly beaten
  • 3 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon smoked Spanish paprika
  • ½ teaspoon red pepper flakes or other red pepper (optional)

Preheat oven to 350 degrees. Line a 13-by-9-inch (or larger) baking pan with nonstick aluminum foil.

Cook rice according to package directions, stirring salt into water before it comes to a boil. As soon as rice is done, measure out 2 cups (not too tightly packed) and place that in a large mixing bowl; allow it to cool a bit. Fluff rice with a fork.

Once rice has cooled some, add pork, chorizo, cheese, eggs, tomato paste, garlic, paprika and red pepper flakes (if using), and mix very thoroughly with your clean hands, pressing and kneading mixture with considerable force several minutes to soften the pork. Transfer mixture to prepared baking dish and shape it into a thick loaf that runs almost the entire length of the dish but leaves at least an inch of room on each side.

Bake in preheated oven 55 minutes or until internal temperature is 160 degrees. Remove from oven and let loaf rest, uncovered, 10 minutes. Slice it into individual portions and serve.
